Spicy Jalapeño Cheddar Sausage & Shrimp Ramen

Ingredients
Protein
- 12–14 medium shrimp, peeled and deveined
- 2 jalapeño cheddar sausages, sliced
Shrimp Seasoning
- 1 teaspoon paprika
- 1 teaspoon Cajun seasoning
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- Salt and black pepper, to taste
Broth & Noodles
- 1 tablespoon butter
- 1 tablespoon oil
- 3 cloves garlic, minced
- 1 small onion, diced
- ¼ cup red bell pepper, diced
- 3 cups chicken broth
- 1 cup milk or half-and-half
- ½ cup shredded cheddar cheese
- 2 tablespoons cream cheese
- 1 teaspoon soy sauce
- 1 teaspoon chili oil (optional)
- 1–2 blocks ramen noodles (discard seasoning packets)
Toppings (Optional)
- 2 soft-boiled eggs
- Fresh jalapeño slices
- Chopped green onions
How to Make It
1. Season the Shrimp
In a bowl, toss the shrimp with paprika, Cajun seasoning, garlic powder, chili powder, salt, and pepper until evenly coated.
2. Sear the Shrimp
Heat a skillet over medium-high heat with a little oil. Cook the shrimp for about 2 minutes per side until pink and lightly seared. Remove and set aside.
3. Brown the Sausage
In the same skillet, add the sliced jalapeño cheddar sausage. Cook until browned and slightly crispy around the edges. Remove and set aside with the shrimp.
4. Build the Broth
In a large pot, melt the butter with the oil over medium heat. Add the garlic, onion, and red bell pepper. Sauté until soft and fragrant, about 3 minutes.
5. Make It Creamy
Pour in the chicken broth and soy sauce. Bring to a gentle simmer. Lower the heat and stir in the milk, cream cheese, and shredded cheddar. Stir constantly until smooth and creamy. Add chili oil if using.
6. Cook the Ramen
Add the ramen noodles directly to the broth. Cook for about 3 minutes, stirring gently until the noodles are tender.
7. Finish
Return the shrimp and sausage to the pot. Stir gently and cook for another minute to warm everything through.
Serve
Ladle the ramen into bowls and top with soft-boiled eggs, sliced jalapeños, and green onions if desired. Serve immediately while hot and creamy.

- Keep heat low when adding cheese to prevent clumping
