Ingredients
  

For the Crust:
  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 cup cold butter cubed
  • 6-8 tbsp ice water
For the Filling:
  • 1 lb ground beef or veal
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • ½ cup beef or chicken broth
  • 1 tsp dried thyme
  • ½ tsp ground cloves
  • ½ tsp cinnamon
  • ½ tsp allspice
  • Salt & pepper to taste
  • 1 tbsp breadcrumbs optional, for thickening

Method
 

  1. Make the crust: Mix flour and salt. Cut in butter until crumbly. Add water, 1 tbsp at a time, until dough forms. Chill 30 mins.
  2. Cook the filling: beef in a skillet. Add onion, garlic, and spices. Stir in broth and simmer 15-20 mins until thick. Add breadcrumbs if needed. Cool slightly.
  3. Assemble: Roll out half the dough for the bottom crust. Fill with meat mixture. Top with remaining dough, crimp edges, and cut vents.
  4. Bake: Brush with egg wash (1 egg + 1 tbsp water). Bake at 375°F (190°C) for 40-45 mins until golden.
  5. Serve: Let rest 10 mins before slicing. Best with ketchup, pickles, or maple-glazed veggies!
