Ingredients
  

  • 2 20-ounce cans pineapple chunks, drained (reserve 6 tablespoons of juice)
  • ½ cup granulated sugar
  • 6 tablespoons all-purpose flour
  • 1 ½ cups shredded sharp cheddar cheese freshly grated for best results
  • 1 sleeve Ritz crackers crushed (about 35 crackers)
  • ½ cup 1 stick unsalted butter, melted

Method
 

Prepare the Pineapple Mixture
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the drained pineapple chunks, reserved pineapple juice, granulated sugar, and flour. Stir until well combined.
  3. Gently fold in the shredded cheddar cheese, ensuring it’s evenly distributed throughout the mixture.
Assemble the Casserole
  1. Pour the pineapple mixture into the prepared baking dish, spreading it out evenly.
Add the Cracker Topping
  1. In a separate bowl, combine the crushed Ritz crackers and melted butter. Mix until the crackers are evenly coated.
  2. Sprinkle the buttery cracker mixture over the pineapple layer, covering it completely.

  1. Place the baking dish in the preheated oven and bake for 25–30 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.
