Ingredients
  

You’ll need:
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1 8-ounce can crushed pineapple (undrained)
  • 2 cups chopped bananas
  • 1 cup chopped pecans
For the frosting:
  • 8 oz cream cheese
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • 4 cups powdered sugar

Method
 

  1. Combine flour, sugar, baking soda, cinnamon, and salt in a large bowl.
  2. Add eggs, oil, and vanilla; stir just until combined.
  3. Fold in pineapple, bananas, and pecans.
  4. Divide batter between two greased cake pans and bake at 350°F (175°C) for about 25-30 minutes.
  5. For the frosting, beat cream cheese, butter, and vanilla until smooth, then mix in powdered sugar.
  6. Cool cakes completely, frost, and stack. Decorate with extra pecans if you’re feeling fancy!
