Ingredients
  

  • cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • 2 teaspoons baking soda
  • ¾ cup unsalted butter softened
  • 1 cup white sugar plus more for rolling
  • 1 large egg
  • ¼ cup fancy molasses

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, ginger, cinnamon, cloves, salt, and baking soda.
  3. Cream butter and sugar: In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Add egg and molasses: Mix in the egg and molasses until fully combined.
  5. Combine dough: Gradually stir in the dry ingredients until a soft dough forms.
  6. Shape cookies: Roll dough into 1-inch balls. Roll each ball in granulated sugar.
  7. Bake: Place on prepared tray and flatten gently. Bake for 8–10 minutes, until just set.
  8. Cool: Let cool on the tray for 2 minutes before transferring to a wire rack.
