Newfoundland Jam Jams: Recipe from Nan’s Kitchen

Ingredients
  

  • ½ cup butter
  • ½ cup brown sugar
  • ½ cup molasses
  • 1 egg
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp ground ginger
  • ¼ tsp cinnamon
  • Pinch of salt
  • ¾ to 1 cup raspberry or partridgeberry jam go for the good stuff!

Method
 

  1. Cream the butter and sugar until fluffy, then mix in molasses, egg, and vanilla.
  2. Whisk together flour, baking soda, ginger, cinnamon, and salt in a separate bowl.
  3. Gradually blend the dry ingredients into the wet mix until a soft dough forms.
  4. Divide the dough in half, wrap in plastic, and chill for at least 1 hour.
  5. Preheat oven to 350°F (175°C). Roll dough to ¼-inch thickness and cut into rounds.
  6. Bake for 8–10 minutes—keep them soft, don’t overbake!
  7. Once cooled, spread jam on one cookie and sandwich with another.
  8. Pro Tip: They taste even better the next day as the jam softens the cookies!
