Ingredients
  

For the Cake:
  • 1 1/2 cups 190g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup 113g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • 2 large eggs
  • 1/2 cup 120ml buttermilk
  • Zest of 1 lemon
  • 1/4 cup 60ml fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup 150g fresh or frozen blueberries
For the Gooey Lemon Glaze:
  • 1 cup 120g powdered sugar
  • 2-3 tbsp fresh lemon juice
  • 1 tsp lemon zest optional

Method
 

Preheat and Prepare:
  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square or round baking pan and line it with parchment paper.
Make the Cake Batter:
  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a separate large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the buttermilk, lemon zest, lemon juice, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the blueberries.
Bake the Cake:
  1. Pour the batter into the prepared pan and spread it evenly.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  3. Let the cake cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.
Make the Gooey Lemon Glaze:
  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Add more lemon juice if needed to reach your desired consistency.
  2. Stir in the lemon zest if using.
Glaze and Serve:
  1. Drizzle the glaze over the cooled cake.
  2. Slice and serve!
