Step 1: Preheat and Prepare
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with cupcake liners and set aside.
Step 2: Mix the Dry Ingredients
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined. Set aside.
Step 3: Cream the Butter and Sugar
- In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
Step 4: Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
- Gently fold in the diced peaches and honey using a spatula. Be careful not to overmix.
Step 5: Bake the Cupcakes
- Divide the batter evenly among the prepared cupcake liners, filling each about ⅔ full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Step 6: Make the Cream Cheese Frosting
- In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
- Stir in the vanilla extract until fully incorporated.
Step 7: Assemble and Decorate
- Once the cupcakes are completely cool, pipe or spread the cream cheese frosting onto each cupcake.
- Drizzle a small amount of honey over the frosting for added sweetness.
- Garnish with thin peach slices or a sprinkle of cinnamon, if desired.
