Ingredients
  

  • For the Cupcakes:
  • 1 ¾ cups 220g all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup 115g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • 2 large eggs room temperature
  • 1 tsp pure vanilla extract
  • ½ cup 120ml whole milk, room temperature
  • 1 cup 150g fresh peaches, peeled and finely diced
  • 2 tbsp honey
  • For the Cream Cheese Frosting:
  • 6 oz 170g cream cheese, softened
  • ¼ cup 57g unsalted butter, softened
  • 2 ½ cups 300g powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 tbsp honey for drizzling
  • Optional: Thin peach slices or a sprinkle of cinnamon for garnish

Method
 

Step 1: Preheat and Prepare
  1. Preheat your oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with cupcake liners and set aside.
Step 2: Mix the Dry Ingredients
  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined. Set aside.
Step 3: Cream the Butter and Sugar
  1. In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract.
Step 4: Combine Wet and Dry Ingredients
  1. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
  2. Gently fold in the diced peaches and honey using a spatula. Be careful not to overmix.
Step 5: Bake the Cupcakes
  1. Divide the batter evenly among the prepared cupcake liners, filling each about ⅔ full.
  2. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  3. Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Step 6: Make the Cream Cheese Frosting
  1. In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  2. Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
  3. Stir in the vanilla extract until fully incorporated.
Step 7: Assemble and Decorate
  1. Once the cupcakes are completely cool, pipe or spread the cream cheese frosting onto each cupcake.
  2. Drizzle a small amount of honey over the frosting for added sweetness.
  3. Garnish with thin peach slices or a sprinkle of cinnamon, if desired.
