Ingredients
  

For the Muffins:
  • 1 3/4 cups 220g all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 cup 120ml unsweetened applesauce
  • 1/2 cup 120ml canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup 120ml molasses
  • 1/4 cup 60ml maple syrup
  • 1/4 cup 60ml milk (any kind)
  • 1 large egg room temperature
  • 1 tsp vanilla extract
For the Topping (Optional):
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon

Method
 

Preheat and Prepare
  1. Preheat your oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with paper liners or grease lightly with non-stick spray.
Mix Dry Ingredients
  1. in a medium bowl, whisk together:
  2. 1 3/4 cups flour
  3. 1 tsp baking soda
  4. 1/2 tsp salt
  5. 1 tsp cinnamon
  6. 1/2 tsp ginger
  7. 1/4 tsp cloves
  8. 1/4 tsp nutmeg
Combine Wet Ingredients
  1. In a large bowl, mix:
  2. 1/2 cup applesauce
  3. 1/2 cup pumpkin puree
  4. 1/2 cup molasses
  5. 1/4 cup maple syrup
  6. 1/4 cup milk
  7. 1 large egg
  8. 1 tsp vanilla extract
  9. Whisk until smooth and well combined.
Combine Wet and Dry Ingredients
  1. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix—this ensures tender muffins.
Fill Muffin Cups
  1. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
Add Topping (Optional)
  1. In a small bowl, mix 2 tbsp sugar and 1/2 tsp cinnamon. Sprinkle evenly over the muffin batter.
Bake
  1. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool and Serve
  1. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature!
