Ingredients

  • 2 cups fresh or canned peaches drained and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch

Method
 

Prepare the Peach Filling

  3. Remove from heat and let the filling cool completely. This step is crucial to prevent the wrappers from becoming soggy.
Assemble the Egg Rolls
  1. Lay an egg roll wrapper on a clean surface in a diamond shape (one corner pointing toward you).
  2. Spoon about 2 tablespoons of the cooled peach filling onto the center of the wrapper. Be careful not to overfill, as this can cause the wrappers to burst during frying.
  3. Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner.
  4. Brush the top corner with a little water to seal the egg roll. This ensures the filling stays inside while frying. Repeat with the remaining wrappers and filling.

  1. In a small bowl, mix the sugar and cinnamon for coating. Set aside.
