Ingredients
  

For the Cake:
  • 3 cups 390g all-purpose flour
  • 3 cups 600g granulated sugar
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup 226g unsalted butter, room temperature
  • 1 cup 240ml buttermilk, room temperature
  • 1/2 cup 120ml vegetable oil
  • 1 tbsp vanilla extract
  • 4 large eggs room temperature
  • 1 cup 240ml water or milk
For the Buttercream Frosting:
  • 2 cups 452g unsalted butter, room temperature
  • 7 cups 875g powdered sugar
  • 1/4 cup 60ml heavy cream or milk
  • 1 tbsp vanilla extract
  • Pinch of salt
  • Gel food coloring red, blue, yellow, and black
For Decorations:
  • Fondant red, blue, yellow, and black
  • Edible markers or food-safe paint
  • Cocomelon-themed cake topper optional

Method
 

Bake the Cake Layers:
  1. Preheat the oven to 350°F (175°C). Grease and line three 8-inch cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add softened butter and mix on low speed until the mixture resembles coarse sand.
  4. Pour in buttermilk, oil, and vanilla extract. Mix on medium speed until combined.
  5. Add eggs one at a time, mixing well after each addition.
  6. Gradually add water or milk and mix until the batter is smooth.
  7. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
Make the Buttercream Frosting:
  1. Beat the softened butter on medium speed for 2-3 minutes until smooth.
  2. Gradually add powdered sugar, one cup at a time, mixing on low speed.
  3. Add heavy cream or milk, vanilla extract, and a pinch of salt. Mix on medium speed for 3-4 minutes until light and fluffy.
  4. Divide the frosting into separate bowls and tint with gel food coloring to create red, blue, yellow, and black frosting.
Assemble and Decorate the Cake:
  1. Level the cooled cake layers with a serrated knife.
  2. Place the first layer on a cake board or plate. Spread a layer of buttercream on top.
  3. Add the second cake layer and repeat. Place the final layer on top.
  4. Apply a thin crumb coat of frosting over the entire cake and chill in the fridge for 15-20 minutes.
  5. Frost the cake with a final layer of buttercream, smoothing the sides and top.
  6. Use fondant to create Cocomelon characters (JJ, YoYo, and TomTom) or other decorations. Attach them to the cake using a small amount of buttercream.
  7. Add additional details with edible markers or food-safe paint.
  8. Optionally, add a Cocomelon-themed cake topper for extra flair.
