Ingredients
  

  • ¼ cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1-2 tsp raw honey or substitute: 5 drops liquid stevia + ¼ tsp orange zest
  • 1 tsp Dijon mustard
  • 1 small garlic clove minced
  • ¼ tsp Himalayan pink salt
  • tsp freshly cracked black pepper

Method
 

Combine wet ingredients:
  1. In a small bowl, whisk together lemon juice, honey, Dijon mustard, garlic, salt, and pepper.
Emulsify:
  1. Slowly drizzle in olive oil while continuously whisking until fully blended and slightly thickened.
Taste & adjust:
  1. Add more honey for sweetness or lemon for tang if desired.
Store:
  1. Transfer to an airtight jar. Keeps refrigerated for up to 1 week. Shake well before use.
