Ingredients
  

  • 2 cups pitted dates chopped
  • 1 cup water
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter melted

Method
 

  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan.
  2. In a saucepan, combine chopped dates, water, and vanilla extract. Cook over medium heat, stirring frequently, until the dates soften and the mixture thickens (about 5-7 minutes). Set aside to cool.
  3. In a large bowl, mix rolled oats, flour, brown sugar, baking soda, and salt. Add melted butter and stir until the mixture is crumbly.
  4. Press half of the oat mixture evenly into the bottom of the prepared baking pan.
  5. Spread the date mixture over the oat layer, leaving a small border around the edges.
  6. Sprinkle the remaining oat mixture over the dates and gently press down.
  7. Bake for 25-30 minutes, or until the top is golden brown.
