Chocolate Covered Mint Patties

A refreshing no-bake treat with cool mint filling and rich chocolate coating.

Ingredients
  

  • 2 cups powdered sugar
  • 3 tbsp unsweetened cocoa powder
  • ¼ cup unsalted butter softened
  • 3 –4 tbsp milk
  • 1 tsp peppermint extract
8 oz semi-sweet chocolate (for coating)

Method
 

Step 1 – Make the Filling
  1. In a large bowl, combine powdered sugar and cocoa powder.
  2. Add softened butter, peppermint extract, and 3 tablespoons milk.
  3. Mix until smooth and dough-like. Add more milk if needed.
Step 2 – Shape the Patties
  1. Scoop about 1 tablespoon of the mixture.
  2. Roll into a ball, then flatten into a round disc.
  3. Arrange on parchment-lined tray.
  4. Chill for 30 minutes.
Step 3 – Coat with Chocolate
  1. Melt the semi-sweet chocolate in the microwave (30-second bursts) or over a double boiler.
  2. Dip each patty into the melted chocolate, covering completely.
  3. Place back on parchment paper.
Step 4 – Set and Serve
  1. Let patties set at room temperature or refrigerate until firm.
  2. Enjoy immediately or store in an airtight container.
