Ingredients
  

You'll need:
  • 4 bone-in chicken thighs
  • A drizzle of olive oil
  • A cup of Basmati rice
  • cups of chicken stock
  • A squeeze of lemon juice
  • A dash of turmeric
  • Fresh parsley or scallions for garnish
  • For seasoning: paprika cumin, salt, and a hint of chili powder

Method
 

  1. Rub the seasoning onto the chicken thighs.
  2. Sear the chicken in olive oil until golden on both sides.
  3. Set the chicken aside; in the same skillet, combine rice, turmeric, lemon juice, and chicken stock.
  4. Place the chicken back on top, bring to a boil, then simmer covered until the rice is tender.
  5. Let it rest off the heat for a few minutes, garnish, and enjoy!
