Ingredients
  

  • 1 1/2 lbs potatoes Yukon gold or russet, diced
  • 14 oz smoked sausage sliced into rounds
  • 2 tablespoons olive oil or butter
  • 1 packet ranch seasoning mix
  • 1 cup heavy cream or milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • salt and black pepper to taste
  • chopped parsley or green onions optional garnish

Method
 

  1. Preheat the oven to 375°F (190°C) if baking, or heat a large skillet over medium heat for stovetop cooking.
  2. Cook the diced potatoes in boiling salted water for 8–10 minutes until just tender. Drain well.
  3. In a large skillet, heat olive oil or butter and sauté the smoked sausage until lightly browned. Remove and set aside.
  4. Add garlic to the skillet and cook for about 30 seconds until fragrant.
  5. Stir in the cream, ranch seasoning, salt, and black pepper. Simmer for 2–3 minutes.
  6. Add the cheddar and mozzarella cheese, stirring until melted and smooth.
  7. Fold in the cooked potatoes and sausage until evenly coated in the sauce.
  8. Transfer to a baking dish and bake for 20–25 minutes, or cook in the skillet until heated through and bubbly.
  9. Let rest for a few minutes before serving. Garnish if desired.

Notes

Use smoked sausage or kielbasa for the best flavor. Do not overcook the potatoes before baking to maintain texture. For extra crispiness, broil for 2–3 minutes at the end.
