Ingredients
  

  • 1 cup unsalted butter softened
  • cup granulated sugar
  • teaspoons ground cardamom
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups all-purpose flour
  • 2 tablespoons coarse sugar for topping (optional)

Method
 

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the butter and sugar together until light and creamy.
  3. Mix in the ground cardamom, vanilla extract, and salt.
  4. Gradually add the flour, mixing just until a soft dough forms.
  5. Roll the dough to about ¼-inch thickness on a lightly floured surface and cut into desired shapes.
  6. Place cookies on the prepared baking sheets and sprinkle with coarse sugar if using.
  7. Bake for 12–15 minutes, or until the edges are lightly golden.
  8. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For deeper flavor, lightly toast whole cardamom pods and grind the seeds fresh before measuring. Store cookies in an airtight container at room temperature for up to one week.
